Homemade Chicken Broth

Recipe: Homemade Chicken Broth自制鸡汤
Makes: 1L
Ingredients
  • 1LB. (500g) chicken / chicken bones
  • 2L water
  • 1½ large sweet onions (peeled & quartered)
  • 1 large head garlic (unpeeled & rinsed)
  • 2 sticks celery (roughly chopped)
  • 2 carrots (peeled & roughly chopped)
  • 1 parsnip (peeled & roughly chopped) * optional
  • 1 turnip (peeled & quarted) * optional
  • 1 small bunch fresh parsley (stems removed)
  • 1 dried bay leaf
  • 2 tsp. whole black peppercorns
Preparation
  1. In a deep stockpot, bring 2L water to boil.
  2. Add all ingredients, cover pot with lid and simmer on high until it comes to a boil again. Reduce heat to low and continue simmer for 1½ to 3 hours.
  3. Turn off the heat. Set a strainer over a large bowl and line the strainer with a couple of layers of cheesecloth. Carefully strain the broth through the cheesecloth. Skim off any fat and foam that set on top.
  4. Let broth cools completely before refrigerating.
