Preparation |
1. Grate ginger and garlic. Mince or finely chop them if you do not have a grater.

2. Chop spring onion into approximately ½-inch sections or shorter (divided into white part & green part). Slice 1 chili diagonally, and julienne another one.

3. Clean spare ribs. Remove any excess fat. Cut ribs into serving size. Then, put them into a medium mixing bowl.

4. Mix ribs with the marinde until incorporate.
|
5. Combine all ingredients A into ribs mixture in step 4.
|
6. Cover ribs and let marinate for at least 30 minutes.
|
7. Heat up steamer over high heat until steamy hot. Place ribs into steamer and steam over high heat for 12 to 20 minutes, or until ribs are cooked.

8. Transfer cooked ribs into a serving bowl or plate if necessary. Garnish with ingredients B.
|
9. Serve steamed spare ribs hot with rice.
