Sambal Nasi Lemak

Recipe: Sambal Nasi Lemak椰浆饭参峇
Yield: 2 cups
Ingredients
  • 1 TBSP peanut oil or vegetable oil
  • 1 cup / 280g sambal base
  • ½ red onion (sliced)
  • 1 cup water
  • 2 TBSP to 3 TBSP tamarind paste
  • 1 stalk lemongrass, crushed & cut into 2.5-inch sections * optional
Seasonings
  • ½ tsp. salt or to taste
  • 2½ TBSP sugar or to taste
  • ¼ cup anchovy crisps (blended into crumbs)
Measurements: tsp. = teaspoon | TBSP = tablespoon
Preparation
  • 1. Halve lemon grass and crush with a knife. Cut lemongrass into 2.5-inch sections.
  • 2. Slice red onion.
  • 3. Heat up 1 TBSP oil in a skillet. Saute red onion for 1 minutes. Add sambal base.
  • 4. Add lemongrass and continue to saute over medium-low heat for about 15 minutes until you can smell the pungent aroma of sambal.
  • 5. Add tamarind paste followed by water.
  • 6. Add seasonings to taste. Cover with lid and cook sambal over medium-high heat until it comes to a boil. Continue to saute for 10 to 15 minutes or until sambal thicken to your desired consistency.
  • Notes
  • Anchovy crumbs helps to enhance the flavor of sambal. You can use whole anchovies instead.
