4. Add lemongrass and continue to saute over medium-low heat for about 15 minutes until you can smell the pungent aroma of sambal.

5. Add tamarind paste followed by water.

6. Add seasonings to taste. Cover with lid and cook sambal over medium-high heat until it comes to a boil. Continue to saute for 10 to 15 minutes or until sambal thicken to your desired consistency.
