Add all ingredients, cover pot with lid and simmer on high until it comes to a boil again. Reduce heat to low and continue simmer for 1½ to 3 hours.
Turn off the heat. Set a strainer over a large bowl and line the strainer with a couple of layers of cheesecloth. Carefully strain the broth through the cheesecloth. Skim off any fat and foam that set on top.
