Papaya N Pork Ribs Soup

Recipe: Papaya N Pork Ribs Soup木瓜排骨汤
Serves: 2
Ingredients
  • 400g unripe papaya
  • 200g pork spare ribs
  • 600ml water
  • ¼ cup peanut kernels (rinsed)
  • 3 slices ginger (thinly sliced)
  • 1 stalk spring onion (use only white part)
  • salt to taste
Measurements: tsp. = teaspoon | TBSP = tablespoon
Preparation
  • 1. Peel papaya, remove seeds, cut into chunks. Chop spring onion into 1" diagonal sections. Thinly slice ginger.
  • 2. Bring a small pot of water to a boil. Scald the ribs in boiling water for 2 minutes, or until clear. Drain and discard the water.
  • 3. Fill a clay pot or small stock pot with 600ml water and bring to a boil. Add peanut kernels, ribs, chopped spring onion, and ginger slices. Cook over high heat for 20 minutes.
  • 4. Add papaya chunks. Cook over high heat for 10 minutes. Reduce heat to low, cover with lid, and continue to cook for another 1 hour until peanuts soften.
  • 5. Season with salt. Serve hot.
