1. Peel papaya, remove seeds, cut into chunks. Chop spring onion into 1" diagonal sections. Thinly slice ginger.
2. Bring a small pot of water to a boil. Scald the ribs in boiling water for 2 minutes, or until clear. Drain and discard the water.
3. Fill a clay pot or small stock pot with 600ml water and bring to a boil. Add peanut kernels, ribs, chopped spring onion, and ginger slices. Cook over high heat for 20 minutes.
4. Add papaya chunks. Cook over high heat for 10 minutes. Reduce heat to low, cover with lid, and continue to cook for another 1 hour until peanuts soften.
