1. Bring a pot of water to boil. Add potato and a pinch of salt to the boiling water. Bring to a boil again. Reduce heat to medium low. Loosely covered with lid, cook until potato is fork tender, about 15 minutes. Fish out potato and place in a bowl. Discard water in the pot.

2. Fill pot in step 1 with water then bring to a boil. Add a pinch of salt and penne pasta to the boiling water. Cook pasta until al dente as instructed on the back of the package. Drain and set aside.

3. Mash one third of the cooked potato together with mayonaise.

4. Add the remaining cooked potato to the mixing bowl in step 3. Add salt, black pepper and lemon juice to taste. Toss to combine.

5. Add red bell pepper chunks, cooked penne pasta, and shredded crabstick into potato salad. Toss to combine. Adjust taste with mayonaise and extra seasonings if needed.

6. Serve potato mixed salad right away or refrigerate until ready to serve.
