Potato Mixed Salad

Recipe: Potato Mixed Salad马铃薯混杂沙拉
Serves: 2 - 3
Ingredients
  • 1 russet potato (peeled & cut into cubes, about 2/3 two third cup)
  • 1 to 2 immitation crabstick, shredded
  • ¼ cup red bell pepper chunks (small chunks)
  • ¼ cup penne pasta
Seasonings
  • salt to taste
  • ground black pepper to taste
  • 1½ TBSP to 3 TBSP mayonaise
  • lemon juice to taste
Measurements: tsp. = teaspoon | TBSP = tablespoon
Preparation
  • 1. Bring a pot of water to boil. Add potato and a pinch of salt to the boiling water. Bring to a boil again. Reduce heat to medium low. Loosely covered with lid, cook until potato is fork tender, about 15 minutes. Fish out potato and place in a bowl. Discard water in the pot.
  • 2. Fill pot in step 1 with water then bring to a boil. Add a pinch of salt and penne pasta to the boiling water. Cook pasta until al dente as instructed on the back of the package. Drain and set aside.
  • 3. Mash one third of the cooked potato together with mayonaise.
  • 4. Add the remaining cooked potato to the mixing bowl in step 3. Add salt, black pepper and lemon juice to taste. Toss to combine.
  • 5. Add red bell pepper chunks, cooked penne pasta, and shredded crabstick into potato salad. Toss to combine. Adjust taste with mayonaise and extra seasonings if needed.
  • 6. Serve potato mixed salad right away or refrigerate until ready to serve.
