Ingredients
- 1 bitter gourd
 - 1 ¼ coils rice vermicelli (pre-soaked in water then drain)
 - 150g minced meat
 
- 1 tsp light soy sauce
 - ⅛ tsp salt
 - ⅛ tsp sugar
 - ⅛ tsp sesame oil
 - ⅛ tsp pepper
 - ¼ tapioca starch or corn starch
 
- 130g anchovies (gently rinsed and drained twice)
 - 1800ml water
 
- ¾ tsp salt or to taste
 - ½ tsp sugar or to taste
 - ⅛ tsp pepper
 - ¼ tsp sesame oil
 - ½ to 1 TBSP light soy sauce (* optional)
 - 1 TBSP shallot oil
 
- shallot crisps
 - shallot oil
 - pepper
 
- chopped bird's eye chilies + light soy sauce
